Dessert of the day today is a Summer Berry Terrine. For a 2lb loaf tin you need about 1kg of mixed berries and approximately 100g caster sugar. The amount of sugar used is to taste and depends on the berries you choose. For the one pictured we picked blackcurrants and redcurrants from the Kitchen Garden and got some loganberries from Maynards in Ticehust and some strawberries from Chris Leach in Ticehurst. Using the berries in equal amounts means the strawberries sweeten the mix so you dont need to add too much sugar. To form the layers we use madeira cake (you can use a shop bought one if you like - make sure that it's an all butter one for a good flavour!)
Simply poach the berries with the sugar. Line the loaf tin with clingfilm and/or baking paper. Save a bit of the berry sauce for decoration and then put a third of what's left on the base of the tin, top with a layer of sponge cut to the shape of the tin , then repeat twice more so you finish with a layer of the sponge on the top. Cover with cling film and pop a weight on top (we use a 2kg bag of sugar) to press down the layers and leave in the fridge over night. Remove all the clingfilm and turn out and serve the next day - you will find some of the pale cake shows through on the sides - use your bit of saved berry sauce to cover over these bits and pop the rest on top and/or decorate with fresh berries. Serve with fresh, local cream - yum!

The Kitchen Garden Week starts tomorrow and runs every day until 15th July. Our Kitchen Gardener Bob will be here every day answering questions and giving advice; there will be a special menu in the cafe featuring produce from the garden and the cookery book 'From the Garden', written by the owners' daughter Hattie Klotz, and based on the Kitchen Garden here, will be on sale in the Gift Shop.
There's beetroot, lettuce, herbs, raspberries, courgettes, onions, edible flowers, spinach and more in the garden and on the menu. The rest of the garden is looking lovely too with lots of lilies out, the herbaceous borders looking great and some early dahlias starting.

17th JUNE 2017
Last day of our Special Rose Week today - the roses are all looking gorgeous and Keith, our Head Gardener, will be giving rose talks through the day at 11am , 2pm and 3.30pm. In the cafe we have a berry, rose and almond meringue roulade as a special and rose lemonade and there is still a good selection of Peter Beales potted roses to choose from if you are looking for a rose for your own garden.
28th MAY 2017
The garden team are very busy at this time of year - they have just potted up 2, 300 dahlias ready for the Dahlia Days event in late summer and then have moved straight onto digging up thousands of tulip bulbs.
Tulip removal is ongoing but the gardens are still looking beautiful with climbing roses out (shrub ones are just starting/almost ready to flower) and lots of lovely rhododendrons and clusters of gorgeous irises. Clematis are starting to flower around their obelisks and the Kitchen Garden has really come to life now - already supplying lots of lettuce, spinach and herbs to the cafe - gooseberries and broad beans are not far off.
This week is our Sculpture in Particular event, which runs every day from Saturday 27th May to Saturday 3rd June (so we are open today and tomorrow too this week). For more pictures click on the facebook link on the left.
6th MAY 2017
Last day of our Tulip Festival today so it's the last day Bloms Bulbs will be here with the tulip display in the marquee - we are open 10am to 5pm.
After today we will re-open on Tuesday for our usual opening days and times (Tuesday to Saturday, and Special Event days, 10am to 5pm, until the end of September).
Lots of colour in the gardens - about 50% of the garden tulips are still out looking great - some more are out and over blown and other varieties have finished completely.
3rd MAY 2017
Lots of tulips still looking great in the gardens (picture below and on facebook taken this morning), tulip display in the marquee is as lovely as ever and the wisteria is out.
Though there are still lots of gorgeous tulips to see in the garden we had some heavy rain yesterday evening and last night, which has finished off some of the patches of overblown ones, so there are some gaps in the display now.
20th APRIL 2017
Tulips in the garden looking fabulous! Cut tulips arriving today and being arranged in the marquee ready for the start of the Tulip Festival tomorrow - Bloms Bulbs have sent 132 varieties of tulips for the marquee and they will be in there from tomorrow onwards giving advice and ready to take bulb orders from anyone who wishes to place one.
Also - much excitement here as the new cookery book, based on our Kitchen Garden and written by the owners' daughter, Hattie, who grew up here, and with pictures by Leigh Clapp, will be on sale in our Gift Shop from tomorrow!
18th APRIL 2017
Tulips 80-85% out now and the wisteria is fully out. Really looking forward to seeing Bloms Bulbs with the cut tulip display once the Festival starts on Friday.
Our Bluebell Walk is open but there are only a handful of Bluebells to see at the moment - we will post updates if more come out.
15th APRIL 2017
Just another reminder that we are closed on Easter Sunday and open on Easter Monday. Thanks to all the lovely viistors who came to see us today.
Tulips are about 80% out now and the wisteria is looking good.
10th APRIL 2017
Gorgeous weather this weekend has seen more tulips coming into bloom - about 50% are out now and we still estimate (weather allowing) that the best show will be from Easter onwards (we are open on Easter Saturday and Easter Monday but closed on Good Friday and Easter Sunday).
The wisteria is just starting to get its first little bits of colour on it - the bluebells are not ready yet but shouldn't be too far off - we will post on here when the bluebell walk is open. Still lots of daffodils out and the magnolia too.
Bloms Bulbs will be here for the Tulip Festival, with the cut tulip display, from 21st April every day to 6th May.
6th APRIL 2017
The gardens, cafe, gift shop and sculpture and art exhibitions are now open for the season, Tuesday to Saturday, Bank Holiday Mondays and Special Event Days, from 10am to 5pm, until the end of September.
We are in the midst of a beautiful, warm spring here on the East Sussex and Kent border so the garden is coming up a little earlier than usual. At the moment we still have lots of daffodils, camellias, hellebores and magnolia looking gorgeous and some of our tulips have started to come into flower.
The first special event on the calendar is our annual Tulip Festival - we have planted 30,000 tulips over the winter. The Festival runs from 21st April to 6th May - during this time we will have multi award winning Bloms Bulbs here on site with a lovely display of cut tulips, with advice and to take bulb orders.
The tulips in the garden are starting to flower now - ones in planters and flowerpots are out and some in warmer spots of the garden - there's a couple of pictures below and lots more on our facebook page so you can see how they are coming along.
At the moment about 20% are out and if this lovely weather continues we should have a few more coming out each day so we estimate (weather allowing of course!) that there should be a good show from just after Easter onwards - we will post regular updates on here and on facebook so you can see how they are flowering.
11th JANUARY 2017
Winter is a busy, busy time in the gardens here. So far this week we have been planning the planting for the kitchen garden - Bob, our kitchen gardener, has been through the Dobies catalogue and made a wish list of all the goodies he would like. (NB congratulations to Dobies who have just been awarded the accolade of 'Best Mail Order Supplier for Fruit and Vegetable plants' from Which! Gardening).
In the office we have just finalised our 2017 leaflet so we should have the finished copies delivered next week ready to give out at Excursions (see our Group Information page for details).
Throughout the rest of the garden Keith and Zena are leading the team to plant 30,000 bulbs ready for the Tulip Festival as well as doing a lot of work in new/reshaped flower beds and Clive and Toby have been busy planning and making a new path - you can see it is coming along nicely below.

23rd NOVEMBER 2016 The Christmas Gift Shop opens tomorrow - so exciting - lots of lovely baubles and gift wrap and Christmas cheer and (most importantly!) gift ideas for all; handbags, framed prints, sculpture, hand painted bowls, homemade chutney, bridge sets, books, hampers and loads more.
Join us any day between now and Sunday 4th December - the shop will be open from 10am to 4pm each day.
